We established Stone & Wood Brewing Company in Byron Bay in 2008 after many years of working in the beer business. Our dream was to quit ‘working for the man’, shed the corporate garbage and get back to basics.
As the original brewers of Byron Bay we built our brewery here at the eastern tip of Australia, in a part of the world where people enjoy having a beer when relaxing after catching a wave, catching a band at the pub or just catching up with friends. It’s that sort of place.
We brew beer for times like these, beers that the locals, and the growing number of craft beer drinkers around the country, and of course ourselves, would find simply good to drink.
Green Coast has a light amber colour with a natural yeast cloud, and a flavour that strikes a balance between its subtle hop aroma and full malt palate, finishing soft and clean. Something so fine, yet so complex requires quality ingredients, attention to detail and finesse to produce.
In this part of the world there are only a few weeks of the year where it gets really cold, and even then you have to be up in the hinterland amongst the misty hills to really experience it.
So brewing big winter beers is something that we really don’t need to do a lot of but we have always wanted to brew a beer that would be more suited to the cooler months but one you could equally drink all year round, a beer that contrasts and balances the rest of the Stone & Wood beers.
Our Jasper Ale reflects the red volcanic soil of our hinterland and is brewed from a blend of pale and crystal malts. Jasper Ale is deep red, has a rich malt character and is well balanced with a firm spicy hop bitterness.
If you’re looking for a pidgeon hole to stick it in there’s no neat fit, but the inspiration comes from German Alt, American Amber Ale and an English Brown Ale styles. We love the spicy bitterness that a German hop such as Hersbrucker brings to a beer to balance that rich malt character.
We were inspired to brew this style of beer by the European village breweries whose ales were brewed and delivered fresh to be enjoyed in the pubs of the surrounding local area. Draught Ale is brewed to be served fresh in the many great watering holes just down the road; therefore we don’t need to filter or pastuerise it. We want it to be served over the bar just like it is in our storage tank at the brewery. Brewed with local water from the Byron Bay hinterland, Australian grown barley, wheat, and hops, and carefully selected ale yeast we have crafted a beer with complex flavours and a clean bitter finish.
Style: Golden Ale/Blond Ale
Brewed for when the days are short and the nights are cold, our winter seasonal honours the ancient techniques of brewing. By adding wood fired stones to the kettle to rouse the boil, the malt characters are intensified. Dark and robust, our 2017 Stone Beer uses six malts, giving it a roasted caramel aroma that’s balanced with a warming, full bodied cocoa flavour.
