A tart, dry and oaky cider. Brewed for us by Zeffer Brewing Co.
Made from New Zealand grown Sturmer Pippin and traditional cider apples. After pressing
the fruit at the Zeffer farmhouse, the juice was fermented with wild yeast. To naturally
mellow the acids we then let it undertake a 3 month malo-lactic ferment on oak.
Voila! Cider as (we think) it should be. Dry and not back sweetened.
Special thanks to Zeffer Brewing Co. for lending us their machinery, brains and manpower.

Trolltunga is a jutting rock in Norway, hanging 700 metres over lake Ringedalsvatnet. Only the wary tread the path to the very edge. This beer was brewed to celebrate friendship and a love of wild places. A collaboration with Lervig Aktiebryggeri from Stavanger, Norway
Style: Sour Ale
Part of Omnipollo/Buxton Original Ice Cream Series that took off in 2014. This beer sits right between sour and sweet. In my mind it is the closest we’ve ever come to balance. Kettle-soured and brewed with added lactose, it is then conditioned on buckets of lemon juice. Perfect, like lemon meringue ice cream pie.

Crunkle Sam, tired of being a mer anomaly as a most refreshing summertime Barleywine Ale, targeted a German beer style and bastardized it. He had us brew a traditional Kolsch, but made us add all natural mango flavor. Warning: This beer is NOT Reinheitsgebot!
Style: Kölsch with Fruit Flavoring
Fermented for an extended period, this premium lager features an aromatic sweetness in its amber tones. With the combination of high quality malts, roasted sweet potatoes and beer craftsmanship, this beer is unique to the Bushu area, using Kawagoe's famous produce, Kintoki sweet potatoes. Take the time to fully enjoy its full flavours and the slightly elevated alcohol content. Called "Beniaka" meaning Crimson Red, in honour of the colours of the sweet potatoes which helped produce it.

'Never mix grape and grain' - we're breaking the cardinal rule again for the second vintage of our grape harvest beer. Chateau Aro, a dark rubescent ale, conditioned on the freshly crushed juice and skins of pinot noir grapes, then aged in French Oak barrels, all from the award winning Escarpment Winery. And the result of this unholy union? Rich, complex and surprising. Remember, beer then wine, you'll be fine.
