Tequila

Tequila (Spanish pronunciation: [teˈkila]) is a regional specific name for a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila, 65 km (40 mi) northwest of Guadalajara, and in the highlands (Los Altos) of the north western Mexican state of Jalisco. Although tequila is a kind of mezcal, modern tequila differs somewhat in the method of its production, in the use of only blue agave plants, as well as in its regional specificity.

 

The red volcanic soil in the surrounding region is particularly well suited to the growing of the blue agave, and more than 300 million of the plants are harvested there each year. Agave tequila grows differently depending on the region. Blue agaves grown in the highlands region are larger in size and sweeter in aroma and taste. Agaves harvested in the lowlands, on the other hand, have a more herbaceous fragrance and flavor.

 

Mexican laws state that tequila can be produced only in the state of Jalisco and limited regions in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas.The United States officially recognizes that spirits called "tequila" can only be produced in Mexico, although by agreement bulk amounts can be shipped to be bottled in the U.S.

 

Tequila is most often made at a 38–40% alcohol content (76–80 proof), but can be produced between 31 and 55% alcohol content (62 and 110 proof)

Casamigos Reposado Tequila

Caramel with hints of cocoa on the nose with a silky, medium texture, with balance notes of dry fruits. Medium to long finish. Aged for seven months in American white oak casks that have been reconditioned after originally being used for premium-aged whiskey. To give each tequila its special flavor profile and ensure the finest quality, we use old-style copper-lined pot stills for distillation.

Ocho Añejo La Magueyera 2014

Tomas Estes and the Camarena family are the founders of Tequila Ocho single estate tequilas. This one, La Magueyera, is a name honoring the maguey plants themselves. The agaves used to make this tequila were grown in gray clay soil on south-facing slopes, which get full sunlight on the average day. Their añejo is aged for one year in very used American whiskey barrels which become “neutralized” and is therefore able to retain as much true agave flavor as possible.

People often think "sweet" when it comes to añejo, but this one stands out in the crowd. Like a good mole, there are flavors of cocoa and buttery richness, but it's also quite vegetal and peppery. It finishes surprisingly clean with a sweet-saltiness, giving it a distinctly elegant and restrained style.

Tequila Ocho is crafted by Carlos Camarena, a third generation Tequilero. It is made carefully in small quantities the artisanal way of times past. This results in a pure Tequila which has an exceptionally full and complex Agave flavor while remaining smooth and balanced. Ocho is the first to produce Tequila from single ranches-- look for the ranch on the label. 

Harvested from single estates, the soil and climate that these agaves are grown in are labeled and proudly displayed, showing that terroir can and does exist in tequila production. Pure sweet agave green notes with mineral and lime pith.
