Rum is a distilled alcoholic beverage made from sugarcane byproducts, such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels. Rum can be referred to in Spanish by descriptors such as ron viejo ("old rum") and ron añejo ("aged rum").
The majority of the world's rum production occurs in the Caribbean and Latin America. Rum is also produced in Austria, Spain, Australia, New Zealand, Fiji, Mexico, Hawaii, the Philippines, India, Reunion Island, Mauritius, South Africa, Taiwan, Thailand, Japan, the United States and Canada.
Rums are produced in various grades. Light rums are commonly used in cocktails, whereas "golden" and "dark" rums were typically consumed individually (i.e., "straight" or "neat") or used for cooking, but are now commonly consumed with mixers. Premium rums are also available, made to be consumed either straight or iced.
A complex blend of Copper pot still rums aged for 12 long years, has a characterful nose, showing fruit cake, rum'n'raisin ice cream, cocoa, dried ginger, cinnamon and clove. Develops baked bananas with fudge sauce and chewy toffee notes alongside vanilla oak and a deeper note of syrupy gingerbread, with hints of orange zest. The palate evokes chocolate sauce and the sweet toffee, fudge and tropical fruit flavours from the nose. Flakes of Terry's Dark Chocolate Orange sprinkled over melted vanilla ice cream. Deep, vivid and extremely seductive flavours.

An elegant multi-award winning rum, El Dorado 12 Year Old typifies the smooth mellow sweetness of Demerara Rums . Savour it straight, on the rocks or in a classic Mai Tai cocktail. A blend of specially selected aged rums, the youngest being no less than 12 years old, it is a combination of the Enmore and Diamond Coffey stills and the Port Mourant double wooden pot still, blended to perfection and aged in old bourbon oak casks.

This superb recent addition to the El Dorado portfolio is the result of the skillful marriage by our Master Blenders of aged rums from no fewer than four of the traditional Stills preserved by Demerara Distillers, including the original Wooden Coffey Still from Enmore and the double Wooden Pot Still from Port Mourant.
This 8 Year Old rum is a complex fusion of a full flavoured, heavy bodied rum with light-to-medium bodied rums aged in bourbon oak casks – creating a sumptuous smooth sipping rum which can also form the basis of memorable cocktails.
Light to medium-bodied nose with hints of tobacco mixed with caramel toffee. Faint aroma of dried stone fruits and flambée banana. Soft and faintly sweet mouth-feel with traces of oak and butterscotch. Distinctly smooth.

It is said that a ship carrying one of the largest quan- tities of black spiced rum ever to be brought over from the Caribbean Islands, for unexplained reasons, never made it to it’s destination. Stories were plenti- ful, and whilst an attack by The Kraken was suspect- ed, no stories were ever confirmed.
Barrels carrying this black spiced rum drifted off the ship into the sea and the rum was renamed after the Kraken as a tribute (Some say as a “sacrifice”) to this beast’s unchallengeable power and might. As they say, “To not respect the power of the Kraken, is to not respect the sea.” So drink with respect!
La Hechicera is a fine aged rum from Colombia. It is a naturally ‘unpolished’ rum, which means it has not been rounded up with additives or sugar, its smoothness and flavour are the result of the noble wood it is aged in. This is the traditional way of making rum that does not require any polishing or ‘finishing’, any additive would only opaque its innate brilliance. Its flavour profile is exactly what we expect rum to be; deep woodiness with characterful notes of things Colombian; a heady scent of toffee and orange peel on the nose followed by a bold burst of flavour on the palate with distinctive notes of tobacco and roasted coffee. Is ending is crisp and smooth.
An opulent blend of the finest spirits aged for 8 to 15 years. Where Eclipse is floral and fruity, Extra Old blends significantly older barrels of mainly double pot distillates that have rounded these crisper notes into a subtler balance. It exudes the finesse that only time can bring and offers a true taste of paradise from the rum that invented rum.
Plantation Grenada 2004 Island Rum
From the most fertile of the Caribbean islands, where plantations of sugar cane adjoin those of cocoa, tropical fruit and nutmeg, Plantation Grenada 2004 reveals aromas of Provençal herbs and yellow fruit mingled with oak. Thyme and stewed fruit notes make this rum more elegant and light.

Keenly vibrant and well-balanced, Plantation 3 Stars displays the finesse and style of Trinidad and Barbados well integrated with the character and fuller flavors of Jamaica. On the nose it has delicate notes of tropical fruits intertwined with brown sugar and ripe banana. On the palate it displays subtle spices and floral notes with a finish of sugar cane and vanilla.
It pairs well with the easygoing Macanudo Hyde Park Cafe (Dominican) with its complimentary vanilla notes, some cream and bread dough.

This rum has a delicate and elegant style, true to its origins, and will make you discover one of Trinidad's greatest treasures. This rum is characterized by its uprightness and its smoothness. The nose is complex with cinnamon and tropical fruits notes, and also notes of smoke. In the finish, we find notes of candied orange and of cooked molasses.
The Trinidad rum receives a year to 18 months of cognac cask ageing (all vintages receive a longer time in French oak than the blends do) before then receiving approximately six months finishing in the Banyuls cask.
