As a traditionalist, François Servin, the winemaker today, is reluctant to change anything in the vineyards, with minimum chemical usage. François adopts a high proportion of ‘Sélection Massale’ (uncloned vine), with an average vine age of 49 years. It greatly contributes to produce extremely tiny yields and thus to produce very concentrated wine.
Servin’s focus on quality and harmonious work with the environment, has greatly improved its name across the globe and now it is regarded as one of the best Burgundian white wine producers.
Servin Chablis 'Vieilles Vignes Massale' AOC, with its special designation indicating that this wine is made of very old vine of 50 years, uncloned. It naturally produces tiny yields of concentrated juice (35hl/ha). Grapes are manually harvested on a hilly slop of south-west facing. 50:50 percent usage of stainless steel and 3-9 year old burgundian oak for fermenting and ageing.
Medium yellow colour. Fresh and powerful aromas of yellow fruits mix with intergrated oak. Complex in mouth and moderate finish. 70% aging in tank and 30% in older barrels. Deep stone fruit aromas lifted by ginger and lime. Broad and dry in the mouth, with healthy acidity tightening the flavors of ripe peach, pineapple, ginger and lichee. Finishes with subtle mounting length and dusty grip. A classic Chablis way.
