Pinot Noir grapes are whole-cluster fermented in temperature-controlled open wood vats. The cap is punched down during the first phase of vinification; once the fermentation is under way the wine is pumped over. Fermentation lasts about 2 weeks in tank and then finishes in tonneaux. Elevage 80% in barrique, 20% in feuillette; no new wood.
Whole bunch sauvignon blanc with the bleedings of sangiovese over merlot skins aged in barriques. Sometimes the most unlikely marriages make the most beautiful partners. White cherries with the tears of angels and the blood of unicorns gliding on tight spicy suave lines.
The grapes from this wine come from the vineyard ”Saomì”, where microclimate and soil are ideal for the cultivation of Glera grape variety.
This well-balanced wine is particularly fresh and its fruit is exalted by a quite lively character.
It is ideal as aperitif, it is a good accompaniment also in formal dinners, especially fish based, or with light first courses.
